Donald Dolaghan brings over 25 years of hospitality experience and a background in civil engineering to the Lucky Penny team. A lifelong restaurant professional, Donald has managed or tended bar at numerous well-known Seattle venues.

In 2020, he founded Zuma Construction LLC, a successful general contracting firm specializing in both residential and commercial projects with a number of hospitality related projects under their belt. in 2023, donald purchased and reimagined Central Pizza in Seattle’s Capitol Hill neighborhood, relaunching it as Jackson Street Pizza Lounge after a complete rebrand and remodel where it has seen great success as a lively neighborhood pizza joint known for its bountiful beverage program, warm hospitality and delicious Neapolitan style pizzas.

At ochg, Donald leads construction and buildout efforts while supporting day-to-day operations as needed. His unique blend of design sensibility, operational knowledge, and construction expertise ensures that the physical space embodies the same care and detail that define the guest experience.

donald can also be found playing in the mountains on his time off and is even more likely to found cruising around town on his harley or rooting for the seahawks with his furry pal zepplin by his side.
